What Is The Achievement And How To Get It
In the Italian Campaign, throughout your story missions or skirmish battles, your loading screen will be replaced by a Letter of a Soldier, either at the start of the battle or at the end. If you play enough of these missions and not auto-resolve you will eventually gather all the Soldiers' Stories. Note however that if you avoid most of these battles or auto-resolve you could finish the campaign before gathering all the required Letters.
From what I know so far and what I have found on the web is that your progress is semi-retained each campaign playthrough. What do I mean by that. Every time you start the campaign, the order the Letters appear is reset, meaning that your first Letter will always be the same etc. However, even though the order is reset, you must *search* for Letters that may require certain conditions, such as:
-Saving Monte Cassino
-Bombing Monte Cassino
Thus if you save Monte Cassino once and you find the corresponding Letter you will not need to find it again, however you will need a save or another playthrough that rewards you the bombing Monte Cassino Letter.
This guide is still under construction gathering the sufficient Letters and requirements for the achievement (I personally do not have it yet, the guide is built on information gathered and I much more prefer the multiplayer than the non-linear singleplayer and brute-forcing this achievement isn't really on my lists of my priorities till there is a fix about it), so any contribution is much appreciated, either to the Letters or to the way of information gathering and presentation since the particular achievement is tricky.

Tips And Tricks
If you happen to be just achievement hunting and want to speedrun through the campaign here is what I have learnt so far:
I am not sure if the difficulty affects this in any way but I did on max difficulty just to be sure there are enough battles. After that, SSF Commandos and the M29 Weasel are your best friends and that is because the Demo Charge ability of the Commandos can almost one shot the enemy HQ. That is why you also need the M29 Weasel (or the M3 call in) to get past the defending MGs. Doing that will result in quick victories in skirmish battles as well as any side objectives will be auto-completed and you can get the most out of it. A key upgrade to this tactic is the Company upgrade that starts all your troops at Vet 1, so that you can rush the Commandos.
Similar tactics can be used with other companies as well, which I did just to spice up a bit of the gameplay because it gets boring pretty fast, as well as having some other companies for the campaign battles. Thus I do encourage people getting creative.
TL;DR
Fight as many skirmish battles as possible
Use Special Operations Battlegroup (preferably)
Use SSF Commandos Demo Charge on Enemy HQ combined with M29 Weasel for transportation
Collect Letters
