Outfit Your Truck And Load Some Cargo

First off, you'll need the mini LC loading crane and a sideboard or flatbed. That's the trick. Basically, you're using the loading crane as a mechanical arm to "pinch" down the extra cargo. But First, load some cargo. Preferably flat or double cargo.

Now spawn your cargo on the bay, and align that baby onto the top of the other cargo as neatly as you can manage. The straighter the better for your top heaviness.

Now reset and raise your crane slightly, then slide it on top of the cargo and "clamp" onto it by pushing down.

Shove Off With Caution

Great, you've double loaded cargo.

Just keep in mind that doing this makes you quite top heavy (and heavy in general too.) Keep an eye where you're driving and don't do anything careless. one wrong bump at speed could spell frustration, but it is a valuable strategy if you are racing the clock or are just plain lazy like me. But hey, look how that cargo sticks to me as I eat dirt!

Don't lose your load off a cliff or something stupid. When in doubt, just put the extra cargo down and get it later.

Extra

Some cargo is either too awkward or too big for this method depending on how you do it. Others are doable but a little janky. Try using your winch to hold single cargo pieces together against the back of the cab.
