Introduction
My definition of completing this game would be to get all the achievements. Another condition that I've added for myself is to also defeat every boss in the game. There are only 3 things that you need in order to achieve this:
1. Elden Ring Map
2. NPC Check-list
3. Check-list for everything else. Only really effective for marking off bosses (if this is a condition that you've set for yourself), key items and achievement related items.
The Map
The map that I've been using while playing Elden Ring is by mapgenie. Here's a link to the map: https://mapgenie.io/elden-ring/maps/the-lands-between
How do you use it?
Just keep the map open as you play, and mark things off as you get them. I have been marking *everything*, but really it's only useful for things that *matter*. Like key items, and achievement-related items. It's helpful because it gives you a very clear idea of what you've cleared, and where you've yet to go.
I would recommend turning off Crafting Materials, since there's 727 of them and they just clutter the map. And also turn off Ruin Fragments (don't waste your time collecting these in Limgrave please :c )
Finally, to make this MEGA convenient for you, USE THE APP! It's on the Play Store. I just have the map open on my phone as I play, super super convenient.
Now the thing with this map is you can only mark off a limited number of things before having to 'upgrade'. One possible solution to this is to mark areas in instances, and then remember that you've cleared those areas. This is what my friends have been doing. I, personally, just upgraded so I could mark off with no limit; the choice is yours.
NPC Check-list
So! If you weren't aware, there's a damn TON of NPCs in this game. Keeping tracking of what the hell you're doing with all of them is nigh on impossible, unless you've played the game multiple times. I would highly, highly recommend following this NPC checklist from roundtablehold: https://roundtablehold.net/checklists/tldr_all_npc_quest_stepsin_order.html
It does save your progress when you close the browser. This will greatly simplify what's going on with the NPCs, what to do and where to go. It's also a really easy way to know where to go next, so you can also follow it as a route of progression; that's what I've been doing.
Sometimes a step will mention a place you haven't been, or maybe you're having trouble finding an NPC. Or perhaps even, the step confuses you entirely! All of these have happened to me. The easiest solution is to search the place or name of the NPC on the map. Voila. Sometimes however, you'll be in a little deeper. Maybe a step is telling you to meet an NPC at a certain place, but... they're not there! For this I recommend just reading the NPC quest steps on Fextra and see if you've missed anything. I wish I had logged all my examples of doing this, as I think it would have helped people greatly. A lot of the time the solution was as simple as just reloading (resting at a grace), or some other tiny thing you might have missed.

The app is no longer available I believe, so just use the browser version. I find this easier anyway.
Comprehensive Checklist
The checklist that I've been using for everything else is by Summoner000, and the link to the original guide is: https://steamcommunity.com/sharedfiles/filedetails/?id=2797977539&searchtext=Checklist
Just save your own copy and use it as you wish.
Conclusion
You should now be equipped to 100% Elden Ring, and do not need anything else. Have fun!
